Abstract: Hintergrund: Der Einfluss von Luftdruck und Geräuschen auf den Geruchs- und Geschmackssinn ist von Bedeutung für die Wahrnehmung von Speisen und Gefahrenstoffen. Ob Einflüsse auf physischer Wahrnehmung oder psychischer Interpretation basieren, ist Thema gegenwärtiger Diskussionen. Methoden: Einfachverblindete prospektive Studie an 16 gesunden, männlichen Probanden; Untersuchung des Geruch- und Geschmacksinns durch klinisch etablierte Riech- und Schmeckscores bei Normal- und Unterdruck, sowie unter dem Einfluss von Störgeräuschen und Stille. Ergebnisse: Die Geruchsschwelle steigt signifikant unter hypobaren Bedingungen. Diskriminations- und Identifikationsfähigkeit bleiben erhalten. Luftdruckveränderungen beeinflussen verschiedene Geschmacksqualitäten unterschiedlich. Das Störgeräusch hat keinen Einfluss auf die Geruchs- oder Geschmackswahrnehmung. Folgerungen: Geräusche beeinflussen die Geruchs- und Geschmackswahrnehmung eher auf Basis psychischer Faktoren als durch eine veränderte physische Wahrnehmung. Die Reduzierung des Luftdrucks vermindert sowohl die Riech- als auch Geschmackswahrnehmung.
Background: The influence of air pressure and noise on the sense of odor and taste is important for the perception of food and hazardous substances. Whether an effect is related to physical perception or psychological interpretation is the subject of ongoing discussions. Methods: Single-blind prospective study on 16 healthy, male testsubjects; investigation of the olfactory and taste senses using clinically established odor and taste scores at normal and reduced air pressure, as well as under the influence of background noise and silence. Results: The odor threshold increases significantly under hypobaric conditions. The ability to discriminate and identify odors is retained. Changes in air pressure affect different taste qualities differently. The background noise has no influence on the odor or taste perception. Conclusions: Noises influence the perception of odors and taste based on psychological factors rather than a changed physical perception. The reduction in air pressure reduces both odor and taste perception.
