dc.description.abstractIn der vorliegenden Dissertation wurde der Lysin-induzierte Abbau verschiedener Kohlenhydratstrukturen (1-Desoxyglucoson, Maltose und L-Ascorbinsäure) mit dem Ziel untersucht, die dabei ablaufenden Fragmentierungswege detailiert zu erfassen. Dicarbonylverbindungen gelten dabei als die Schlüsselintermediate des Kohlenhydratabbaus. Als zugrundeliegende Fragmentierungsreaktionen wurden die hydrolytische und amininduzierte β-Spaltung und die oxidative α-Spaltung nachgewiesen. Die Folgeprodukte der Fragmentierungsreaktionen sind Carbonyl- und Dicarbonylverbindungen, Carbonsäuren und Carbonsäureamide. Die für Modellsysteme erarbeiteten Fragmentierungsmechanismen tragen maßgeblich dazu bei, Reaktionsabläufe in Lebensmitteln und in vivo besser zu verstehen, auch wenn die Systembedingungen hier wesentlich komplexer sind.-
dc.description.abstractIn the present Ph.D. thesis the lysine-induced breakdown of different carbohydrates (1-deoxyglucosone, maltose, and L-ascorbic acid) was investigated with the aim of gaining insight into the mechanistic scenario. In general, α-dicarbonyl compounds are the most important key players during degradation processes. The hydrolytic and amine-induced β-dicarbonyl cleavage reaction and the oxidative α-dicarbonyl fragmentation were confirmed as the underlying dicarbonyl decomposition pathways to form carbonyl and dicarbonyl compounds, carboxylic acids and carboxylic acid amides. Knowledge regarding fragmentation pathways in the model systems are prerequisite to better understand reaction processes taking place in foods and in biological systems although conditions are much more complex.eng
